Sarah and I were invited to a family dinner a few weeks ago where we were the only two vegans. We didn’t want to show up and be like, “what can we eat??” so we decided to bring a homemade dish: vegan stuffed bell peppers.

Sarah, being the amazing women she is, knew she could come up with a delicious recipe that would be loaded with protein and be very tasty and filling.

Since I hadn’t had a vegan stuffed pepper in a few years, I thought, “yeah, that sounds like a great plan.”

And wow, these turned out delicious!!

Vegan Stuffed Bell Peppers

Deliciously-seasoned, stuffed bell peppers that are easy to make and taste great!

Equipment

  • Cooking Tin

Ingredients
  

  • 6 bell peppers red, orange, yellow are best
  • 1 large onion
  • 5 containers white mushrooms
  • 1 handful parsley
  • 1 32 oz box of vegetable broth
  • 1 can diced tomatoes I used fire-roasted
  • 1 cup uncooked lentils
  • 1 cup uncooked rice
  • 1 bottle tomato sauce I chose DeLallo b/c of minimal ingredients
  • nutritional yeast to taste
  • seasonings (rosemary, basil, salt, pepper, oregano, thyme) to taste

Instructions
 

  • Heat skillet w/ minimal oil.
  • Add chopped onion and cook until browned.
  • Add chopped mushrooms and parsley to cook down.
  • Slowly add vegetable broth throughout the process to avoid burning.
  • When cooked down, add diced tomato. Make sure to strain out liquid from can.
  • Cook lentils in a separate pan. When done, strain out liquid and add lentils to skillet.
  • * If mushrooms gave off too much liquid, you can strain out the water.
  • Cook rice in separate pan. When done, add to skillet.
  • At this point, the mixture in the skillet will be "pasty."
  • Add sauce + seasonings.
  • Mix in nutritional yeast.
  • Cut bell peppers in halves. Fill peppers with finished skillet mixture.
  • Fill bottom of tin with sauce and place bell peppers into tin. Cover with more sauce.
  • Cook at 475 degrees for about 30 minutes.
  • Remove from oven and top with more nutritional yeast.

Over the years, it has been challenging to find a vegan protein powder that delivers high-quality ingredients while keeping its cost low. For the past few months, I’ve been solely using the brand VivoLife.

VivoLife is an awesome brand. Don’t get me wrong, I love this brand. However, purchasing plant-based protein is expensive to begin with, so when you order the high-end plant-based protein powder, it becomes extremely expensive.

Now, when I say extremely expensive, I’m comparing prices of plant-based powders to those of animal-based protein powders.

I believe (and don’t quote me on this) there are 5lb animal-based protein products on that market that sell for the same price as these “more expensive” 2lb plant-based protein powder bags. It’s crazy.

The cost of plant-based anything this year is going to be slightly more expensive than animal products. Why? Because the demand for plant-based products is lower than the demand for animal-based products (unfortunately).

But, the demand for better alternatives is growing significantly!

Why Should I Buy Plant-Based Protein Powder?

Research suggests that consuming a diet rich in plant-based foods will keep you healthier, give you more energy, and help you lose weight quicker (and keep it off for good).

I will only buy plant-based protein powders for a few important reasons:

  1. They digest better (no gas, bloating)
  2. They don’t contain many “fillers” (to make it seem like you’re getting a good deal, when really you’re just paying for processed sugar)
  3. They’re better for your health

There are at least 15 vegan plant-based protein powders on Amazon that to me, qualify as “great protein powder.”

When I’m looking for a new plant protein powder, I read most of the 1-star and 5-star reviews to get a good variety of what customers think. I also do a bit of research on their list of ingredients to determine if they’re of quality.

With the recent discovery that a lot of protein powders contain heavy metals, and that consuming larger-than-desired doses per day is bad, I have limited my list to only vegan protein powders that contain unmeasurable amounts of heavy metals.

Choosing a protein powder might seem easy, but realistically you shouldn’t just buy the first one that pops up in the Amazon search results.

Why Shouldn’t I Always Trust Amazon Results?

Amazon doesn’t always list the “best products” first in the search results. They sometimes list products that are selling well to entice other consumers to get on the purchase-bandwagon.

Other times, you may find that Amazon lists the products that are only gaining popularity, a metric that can be compromised by strategic marketing.

That’s why it’s important to do your research on multiple products before buying.

How Do I Find the Best Protein Powder Supplement Then?

Before jumping the gun and picking any vegan protein powder, I highly suggest buying two items first (if you don’t already have them):

  1. Shaker Bottle – to hold the liquid
  2. Shaker Bottle Ball – to break up clumps

Even though I’ve tried the powders below, the overall reason people give a certain protein powder a 1 or 2-star rating is because they can’t seem to solve the clumping issue.

No one likes drinking a protein drink that contains clumps. I’m no different.

However, a few years ago I discovered a SIMPLE solution! You can remove the majority of clumps by using a cheap, stainless steel shaker ball wire whisk.

Now, onto the protein powder comparisons and reviews…

Generally, before making a protein powder purchase, I ask myself questions like these:

  1. Is it affordable?
  2. (for me) Is it vegan? Cruelty-free?
  3. Do people seem to like the flavor?
  4. Does this powder contain quality ingredients?
  5. Will it mix well in water or plant milk?
  6. Am I getting a good quantity of powder for the price I’m paying?
  7. How many ingredients does it have?
  8. How much protein is in each serving?

If a brand meets this criteria, I’m likely to make a purchase.

The absolute BEST protein powder I have ever had

Alright, I’ll start off by saying this is the BEST protein powder I have ever had. I have tried multiple brands (big and small, MLM or bought at target) and a lot I have trashed. I have a degree in nutrition and fitness, I’m a wife, a boy mom chef, a very busy online nutrition and fitness professional.

I don’t have time for crappy products. I don’t want to be eating or drinking them, I won’t recommend them to my clients and I certainly won’t give them to my kids or family. Thankfully this product hit the amazing mark in everything.

1. The plant protein sources; pea, flax, quinoa, pumpkin and chia. Pea protein is an awesome source of protein along with the carbs we want. Flax and chia are great sources of omega 3’s (which we all need more of since we are typically high in omega 6 which causes inflammation), Chia seeds are perfect for adding in additional fiber into our diets with very little effort. Quinoa is the perfect mix of protein and good carbs and pumpkin is amazing for our reproductive health – women and men!

2. The awesome enzyme blend; amylase, protease, lipase, lactase, and cellulase. Protease which digests protein. Amylase digests carbohydrates. Lipase for fats and oils digestion. Lactase which digests dairy products. And cellulase that converts glucose. Who wouldn’t want this in their protein shake?

3. The sweet stuff. Organic agave, Organic Coconut Sugar, Stevia, Monk Fruit. Perfect blend of sweet without being too sweet and a bonus because it doesn’t upset any of the little bellies in my home.

4. The fruit and vegetable blend they have formulated is perfect! It leaves no grit, even with foods like quinoa and seeds being in it. It blends perfectly, super smooth, cooks well, freezes in other foods well, isn’t clumpy, and it’s $39? People pay $200+ for a shake that doesn’t taste half as good and is loaded with things that can cause a lot of GI distress. I would easily pay $200 for this shake. They batch test their own products..no weird, sketchy other company needed. If something is too high – the ditch it!

5. This one is pretty important. Their customer service is amazing! I work in an industry where client relations is SO important and these guys nailed it with their team. They’ve answered tons of questions for me and have been so kind!

I ordered the Vanilla to try first – but I love it so much I know that the chocolate will be just as good if not better! I’ll be ordering that tonight. Happy to say I will never have to try or search for another protein powder again! I will 100% be recommending this to ALL of my clients, family, friends and anyone I know because I love it that much!

I’m not a big meat eater but I know I need protein. I bought this protein powder as an addition to my diet. When it arrived, I was pleased at how big the container is. The directions are easy to read and understand. It does come with a scoop although I had to dig through the powder to find the scoop. The first time I used it was with cold water. It tasted a lot like chocolate milk. It was slightly chalky but I didn’t shake it. I stirred. Shaking in a closed container would be better. I also tried adding it my coffee. For me personally I did not like it that way. I’ll continue using it but with very cold water. It is still a good protein replacement product. It’s also plant based which is good for vegetarians.

The taste and texture of the vanilla and chocolate are fine, not wonderful. But on the digestive front, for me, it’s great. It’s the first protein powder I’ve used that doesn’t have me horribly gassy all day (this and rx bars). I work in an office setting so that’s a no go, not to mention the discomfort. I do belch a few times after drinking it in the morning but that dissipates quickly. I like that it only has a few ingredients, simplicity is good. So for all the pros, I’ll live with the taste. At this point I’ve accepted that I just like whey protein powder better than plant based ones. With that in mind, this is the best vegan protein powder I’ve tried. Though Vega beats this on taste, PEScience is superior when it comes to consistency. You can actually throw this in a shaker bottle with almond milk and drink it (when I did that with Vega the mixture immediately thickened and wasn’t drinkable). Still has a bit of that grittiness that I’ve found to be present across all vegan protein powders, but isn’t as bad as that you find in sunwarrior or orgain. If you’re trying to go plant based with your protein, I think this is one of the better options.

I fill it a little bit more than half of the shaker and it’s perfect.

So you want to know what this protein is like? I.ve got you covered. To review this protein I used only the bare minimum: 8oz of water in a standard shaker bottle with mixer ball.

Taste: a light chocolatey flavor, no overpowering triple dark extra chocolate triple fudge sweetness here. More like a lightly sweetened chocolate milk. It’s naturally sweetened with stevia, thankfully no artificial sweeteners. No bitter or bad aftertastes. I personally have a sweet tooth, so to some others this may be more than sweet enough.

How it mixes: very easy to mix in the 8oz of water and shaker bottle, no clumps, evenly dissolved. I have whey protein isolate that doesn’t dissolve as well as this vegan protein!!

Im new to this brand and to ease some others about the skeptical view of other reviews on here, i think it tastes fine. Some say its too sweet. Much bigger than my more expensive protien that only came half full. So right off I was impressed. I got the Vanilla Ice Cream and it smelled heavenly. I haven’t used the product as of yet but after talking to a few friends about it and its performance, I had to try it. I like the ingredients that’s in there, so that’s why I ultimately choose it. I started off looking for a all natural/vegetarian/vegan weight gainer and this is one of only a select few products that came close. I bought the one lb size last time and I won’t do that again..went too fast! :). My 2 lb just arrived and wanted to take a sec and give a review. With 21 gms of plant protein, this is an amazing supplement. My shake consists of: 1 scoop, banana, 2 TBsp of PB2, and 12 ounces chilled liquid (usually 8 oz soy/4 oz filtered water). I throw this in the blender. Sometimes I will throw in frozen blueberries or kale. This is a go to after working out and if I don’t have time for a sit down meal. I struggle to get enough protein on a daily basis and the above basic shake supplies about 35 gms or so. Amazing. The blender helps for this to not be grainy. This is probably the most expensive protein powder I’ve purchased. But there’s only 5 ingredients! 1 being the pea protein, the others being vanilla/chocolate flavor, and one other whose name I can’t recall and not sure what it is. Either way, better than my Optimum Nutrition Whey Isolate protein which has numerous additional chemicals and additives with the protein. You’re paying for being healthier by getting protein powder without all the heavy metals that you’ll find in others like the Vega protein powder I used to get. Personally I wouldn’t use this protein powder long term given the cost, but if you’re going for like a 3 month cut or bulk or something like that and want good protein without worrying about the health risks of additives with protein powder, this is definitely the powder for you.

First of all I love the taste of this. It’s not artificially sweet or chalky and it dissolves great. It’s pretty creamy, especially with milk (but I use water), and has a really nice chocolate flavor (I have not tried the vanilla). It’s the only protein powder I’ve found that has the best value and includes carbs. Carbs are life, people! And also a ton of fiber; it has 10 grams!! It will keep you full, which is great. Halloween 2018

Last year, Sarah and I were “horrible people.” We didn’t put out Halloween cookies, candy, or decorations, and left our lights off the entire night.

It’s not that we don’t enjoy celebrating the holiday but it’s that not many children roam the streets in our neighborhood.

Seriously, one of the youngest kids on the block is Sarah. Lol

I remember growing up on a street that had tons of kids trick-or-treating each year and I even participated in the holiday’s festivities until the age of 18.

I was the tallest boy on the street (6’5’’ at 18 years old) and so I had to kneel down after ringing the doorbell. Hey, it worked and I love free candy!

This Halloween Will Be Different

However, after last year’s experience, we knew we needed to do something a bit more special for those few kids that do come door-to-door.

After some thought, we decided to do a practice run and bake some delicious vegan Halloween cookies in the shape of ghosts.

Since we didn’t have any spooktacular vegan ghost cookie recipes, we improvised. We experimented with our delicious vegan chocolate chip cookies recipe and purchased a round-ish cookie cutter shape for the ghost’s body.

In our minds, these cookies were going to look just like Boo from Super Mario.

We wrote down our design ideas and then left for the store to buy a plate shaped like a bat, some plastic spiders, cotton ball spider webs, and foam pumpkin decorations to spice up our pictures.

Side note: On decorations (for the pictures) alone, we spent $15.80 at Walmart. Kind of pricey for what we got but the pictures look great!

I had mentioned to Sarah that we should take our pictures outside to get the best lighting because the house we’re in is full of those yellow fluorescent lights.

We unloaded the groceries, preheated the oven, and started baking.

A few minutes in, clouds rolled in and sleet poured down by the buckets full. Outside pictures weren’t an option anymore so we did the best with what we had.

For the recipe, it’s best if you measure exact ingredients, with the dry ingredients first, followed by the wet ones.

The Halloween Cookie Baking Process

After measuring out the cookie dough ingredients (recipe here), we were ready to start cutting out ghost shapes.

We did a test run on just 3 cookies before potentially wrecking the entire batch.

Our cookies didn’t look like we had imagined! However, they were scrumptious!

What we did was this… once we made the initial cut-out and placed the ghost-shaped cookie dough on the baking sheet, we baked it like normal. When the cookies came out of the oven, we used the same round/ghost shape to make a cleaner cut out of the cookie.

Baking increased the puffiness of the cookie, making it look less like a ghost and more like a regular cookie.

After letting the cookies cool for about 15 minutes, it was time to frost.

Sarah did a really great job at frosting/icing these cookies and with such precision!

Most of us get hooked on food at a very early age.

Food traditions are difficult to break, especially when our parents, grandparents, and even great grand parents have had these food-related traditions for generations.

As a society, we celebrate birthdays, holidays, graduations, church events, and even funerals with FOOD.

Food is the center of most families because it’s what keeps us alive, right?

We connect with flavors, colors, textures, and smells.

Children are taught certain “DOs” and “DON’Ts” when it comes to food and we’ve even got a food pyramid explaining which foods to eat in which quantities:

DOs:

  1. Do eat fruits and vegetables in abundance
  2. Do eat a little red meat
  3. Do eat fish (for the omegas)
  4. Do drink milk (for the calcium and protein)
  5. Do eat healthy fats like avocados

DON’Ts:

  1. Don’t eat too much processed sugar (or avoid it altogether)
  2. Don’t drink alcohol
  3. Don’t smoke cigarettes
  4. Don’t eat highly-processed foods
  5. Don’t eat trans fat

As a child, receiving these guidelines from individuals I trusted, made me grow up thinking that if I simply followed these suggestions, I’d lead a happy and healthy life.

I was wrong.

I mean, I’m happy and healthy (now) but with those childhood guidelines, I was setting myself up for failure… and death.

Back when I was a child (which seems like forever ago), there were non-stop commercials for every type of food; hamburgers, hot dogs, chicken wings, pizza, etc.

You’re probably thinking, “you must still be a child because those types of commercials are STILL on…”.

Well, you’re right in the fact that food is being marketed to all types of people, no matter their age, because food sells.

Good looking food sells.

Delicious-tasting food sells.

And it doesn’t matter who’s watching these commercials, as long as someone buys this food.

At least that’s what the meat/dairy industry are thinking.

Dairy Is Considered Healthy??

Dairy is promoted as this “healthy, high-protein drink” that young children-to-adults should be drinking daily; multiple times per day.

The dairy industry knows that their product was failed from-the-start but they have decided they’re not going down with their sinking ship until they’re fat and loaded with cash.

Dairy is in pretty much everything these days: ice cream, yogurt, pizza, casseroles, sandwiches, omelets, you name it and chances are it contains dairy (unless you’re vegan and you’ve tapped into the non-dairy side of amazing-freaking-living).

Do you know HOW and WHERE dairy even comes from?

In order to get milk from a cow (cow = female, bull = male), the cow must be pregnant. Let me say that again: the cow has to be pregnant to make milk.

I was talking to a friend of mine recently who hadn’t even considered a cow must be pregnant to product milk. This is a friend who has even breast-fed 5+ children.

If you think about it, when do mothers produce milk in order to feed their newborn child(ren)?

When they’re pregnant.

Not just any woman walking down the street can squirt milk from her chest. If any woman could naturally do this, I bet she’d be rich!

Mammals that produce milk are the same way; the female must be pregnant to make milk.

As many of you may know, being pregnant can be a spiritual experience. You connect with your baby. The baby knows you. It’s supposed to be wonderful.

However, in order for these dairy farm cows, who reside in these extremely tiny cages, to get pregnant, a worker will artificially inseminate them.

Literally, a guy (or a machine) with a rubber glove (that extends all the way up the arm), will take a handful of bull semen and shove it up the cow’s reproductive tract.

Is artificial insemination painful for cows?

“…Thus at the tender age of 15 months female dairy cows are forced into pregnancy through artificial insemination. This process is extremely painful for the animals, as inexperienced farm workers often restrain the animals in a “rape rack” as it is known in the industry and use a metal rod to forcefully inseminate them.”

And this is where the dairy industry has gone a little whack.

The dairy industry has completely removed anything natural from the equation.

It’s a system now and animals are no longer animals, they’re products. And that idea sickens me.

Let me sum up what I’ve just said because I want you to get a clear picture of what’s going on here every time you reach for something that contains milk (no matter if it’s that organic, farm-raised, grass-fed nonsense):

The Calf Lifecycle

A calf is born.

If it’s a female, it’s raised as a dairy cow. If it’s a male, it’s most-likely kept alive and used for veal because male cows don’t produce milk (great system, huh?) – by the way, they do this with male chicks too by tossing them in a shredder.

The female is ripped from its mother immediately (who went through this same process).

It’s raised to 15-months-old and then artificially impregnated (remember that guy with the rubber glove?). Then it’s forced to be held captive, in a TINY cage where it cannot move around or even turn around, until it balloons up with an overly-large udder and drained of milk.

This pregnancy process is then REPEATED 2 or 3 times to get the most amount of milk from a single cow. The cow, completely drained of all life, is then slaughtered for all cuts of meat.

Oh, and did I mention that up to 750-million pus cells (per liter) have been measured in milk products.

You’re drinking pus in every glass.

You want my 16-year-old self to come to your house each meal and squeeze pus from my zits into your food? No?? You don’t?? Well, saying yes to milk saves me a trip.

I’ve lost my appetite.

And dairy is supposed to be healthy?!

Somehow, dairy has become a household item because it’s advertised as “high protein” and “healthy.”

But what about the calcium for my bones, you ask? Um, no, milk actually leaches calcium from your bones making your bones weaker.

A Sick Example of What’s Really Going On

Let’s say I start a company that sells human organs for food. I know, I went there, but keep reading…

I hope no one from the meat or dairy industry reads this because they might actually make this hypothetical example into a thing. Keep track of your children!

Anyway, back to my creepy example…

I advertise that buying and eating another person’s organs will keep you healthy because you’re a human and eating another human is healthier than eating a non-human.

My marketing tactics and tricks start working. I start making more money, driving more sales. I’m rolling in the big bucks!

I can finally buy that Tesla Model S P100D I’ve always wanted!

However, with an increase in organ demands, I need to make and/or find more people to cut up and sell.

Hmm, I think….[lightbulb!]

If I could collect a large number of women to forcefully impregnate, I could use the newborn children’s organs because they’re fresh and uncontaminated. I may even be able to sell more baby organs than adult ones.

This could work.

But how am I going to keep the news from getting out that I’m selling newborn baby organs? I need to find a way to silence those that might leak it…

I know! I’ll cut the vocal cords and legs of the women I’m impregnating so they can’t escape!

This idea works, the women can’t run or scream, the people I’m selling organs to have NO idea where the organs coming from, and I’m making a boat load of money!

And this process goes on, and on, and on, and on…

Final Thoughts

My example above was a poor attempt at making a point; it’s basically what the meat and dairy industries are doing with animals.

However, more and more people, just like you and me, are becoming aware of what’s happening “behind the scenes” at these factory farms. People are making thoughtful food choices and those choices are making changes.

BIG changes.

People you and I know are standing up for what’s right and I highly encourage you to do the same.

More and more people are changing what they eat in order to DEMAND these industries to STOP what they’re doing and THINK of a better solution.

And all of this change has scared the meat and dairy industries into changing, even if it’s a little bit. What you eat is actually making a difference in the world!

When I lived out-of-state from my parents, they knew that when I visited that I’d be looking for some of that delicious chocolate and peanut butter pie when I arrived.

Ingredients
  

Pie crust

  • 2 Oreo Pie crusts

Chocolate pie filling

  • 16 oz firm tofu
  • 1/4 cup unsweetened plant-based milk
  • 1/3 cup pure maple syrup or agave nectar
  • 1 tsp pure vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp sea salt
  • 1/2 cup vegan chocolate chips melted

Peanut butter pie filling

  • 16 oz firm tofu
  • 1 cup peanut butter (creamy)
  • 3/4 cup granulated sugar make sure it's vegan
  • 2 tbsp unsweetened plant milk
  • 2 tsp vanilla extract

Coconut cream

Optional Pie Toppings

  • Chocolate sauce (melted chocolate chips with a little plant milk, mix until smooth)
  • Fresh, sliced strawberries (or any other fruit)

Instructions
 

Pie Crust

  • You'll need to buy an Oreo pie crust from the store. I don't have a recipe for that yet!

Chocolate pie

  • Combine tofu, plant milk, maple syrup/agave, vanilla, cocoa powder, and salt in blender and blend on high until very smooth. Add a little more plant milk if mixture is too thick.
  • Once smooth, add melted chocolate chips and blend to incorporate.
  • Pour the mixture into the pie crust and smooth out the surface.
  • Put the pie into the fridge to chill for 1.5 hours.
  • ** Once the chocolate pie has solidified in the fridge, move on to creating the peanut butter pie filling.

Peanut butter pie

  • Combine all ingredients in a food processor or high-speed blender and blend until smooth.
  • Pour mixture on top of chocolate pie.
  • Put in fridge for about 1.5 more hours.

  • 2 cups unsweetened soy or almond milk
  • 3 handfuls chard/spinach/kale mix
  • 2 frozen bananas
  • 3 medjool dates no pits
  • 1/2 cup blueberries
  • 2 tbsp ground flaxseed
  • 2 tbsp hemp seeds
  • 1/2 avocado
  • 1 cup ice

Instructions
 

  • Throw everything except the ice into a high-speed blender (I prefer vitamix because the tamper tool allows you to blend more ingredients at once).
  • When the ingredients are blended, add ice.
  • Blend for another minute.

Nice Cream

  • 3 frozen bananas
  • 1/4 to 1/2 cup unsweetened soy or almond milk

Carob Sauce

  • 1 tbsp carob powder
  • 1/2 tbsp coconut oil

Instructions
 

  • Blend the bananas and soy/almond milk in a high-speed blender until desired consistency.
  • In a separate bowl, combine carob powder and coconut oil. Stir until desired consistency.
  • You may need to add more/less carob powder to coconut oil depending on your preference.
  • Drizzle carob sauce over banana nice cream.

Quesadillas

This vegan quesadilla is really fantastic! It uses Daiya brand mozzarella vegan cheese and is topped with fresh tomatoes and avocado.

Ingredients
  

  • 1 12 in flour/corn tortilla
  • Daiya Mozzarella cheese
  • 1/2 tomato
  • 1/2 avocado
  • Cilantro (for taste)

Instructions
 

  • Pre-heat a non-stick pan.
  • On a plate, place one tortilla face down and top with cheese.
  • Place second tortilla on top and put plate into microwave for 25 seconds (or until the cheese is melted).
  • Remove tortilla from microwave and place onto pre-heated pan. Cook until tortilla is crispy.
  • Remove tortilla from heat and top with freshly cut tomato and avocado.
  • Add cilantro for more flavor, if desired.

Notes

This vegan quesadilla is really fantastic! It uses Daiya brand mozzarella vegan cheese and is topped with fresh tomatoes and avocado.If you like quick and easy meals, and aren't afraid of eating a little processed vegan cheese, then this recipe is for you. For me, I try to consume 90% whole foods, plant based items so eating a little processed foods once in a while is fine with me!

tofu scramble spinach tomato

Tofu Scramble

This recipe is packed with protein, nutrients, and lots of flavor. The cheese adds a nice touch but isn't required. You could even wrap the contents of this in a tortilla to make a breakfast burrito.

Ingredients
  

  • 1 block firm tofu
  • 1/4 cup Daiya mozzarella
  • 1/4 cup red/yellow onion
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp Lowry's seasoning
  • 2 to 3 cups fresh spinach
  • 1 tomato
  • Parsley (chopped, optional)

Instructions
 

  • Heat a non-stick pan to medium. Chop onion.
  • While pan is heating, open the tofu package and wrap the block in two sheets of paper towel.
  • Squeeze the tofu until most of the excess liquid has been removed.
  • Crumble tofu into pan and start cooking.
  • Stir in spices (chili powder, cumin, Lowry's).
  • Once onions are at desired consistency, add Daiya cheese and mix until melted.
  • Add spinach and tomato.
  • Remove pan from heat after about 1 minute.
  • Eat immediately (but don't burn yourself)!

This recipe is high in protein and super quick and easy to make!
