Green Salad With Gardein Chick'n

This fast and easy recipe will not leave you wanting more! It's super filling, flavorful, and satisfying.

Ingredients
  

  • 4 cups mixed greens salad mix (or any green leafy vegetables: spinach, kale, arugula, etc)
  • 1 avocado
  • 2 cups cooked quinoa
  • 1/2 bag Gardein Chick'n strips
  • Follow Your Heart Caesar dressing

Instructions
 

  • Heat up as many Gardein chick'n strips as desired using a skillet.
  • While chick'n is heating up, throw everything else into a large bowl and mix.
  • When chick'n is grilled to perfection, cut up into small pieces and add to salad.
  • Top with as much dressing as you want.
  • Enjoy!

Notes

This is the type of meal you could eat most nights. It's quick, easy to make, and very nutritional. Just look at all those greens!

Masoor Dal

This is a recipe I found online and HAD to try it. While I love eating salads for dinner, it's fun mixing things up a bit. This recipe is now a staple in my diet and love eating it on cold nights!

Ingredients
  

  • 2 tbsp vegetable oil
  • 1 cup finely chopped onion
  • 2 1/2 cups finely diced sweet potato
  • 1 tbsp ginger minced
  • 2 garlic cloves minced
  • 1 Thai or bird's-eye red chili
  • 1 cup red lentils
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp turmeric
  • 1 tsp ground ginger
  • 1 cup canned chopped tomatoes
  • 3 tbsp chopped cilantro
  • Pieces of coconut flesh from a fresh coconut (optional)
  • salt (to taste)

Instructions
 

  • In a large saucepan over medium-low heat, heat oil, and sauté onion until softened.
  • Add sweet potato, and sauté for about 5 minutes.
  • Add minced ginger and garlic; stir, and reduce heat to low.
  • Finely dice chili, keeping seeds if you wish to add more heat.
  • Add chili, lentils, coriander, cumin, turmeric and ground ginger to pan.
  • Stir until lentils are well coated with oil.
  • Add tomatoes and 4 cups water.
  • Raise heat to bring to a boil, then reduce heat until mixture is at a fast simmer.
  • Cook uncovered until lentils and potatoes are soft, stirring occasionally, about 25 minutes.
  • Season to taste with salt, and continue to simmer until mixture has thickened, about 10 minutes.
  • Whisk dal to amalgamate lentils and sweet potatoes. If dal is too soupy, increase heat and cook for a little longer.
  • To serve, place dal in a serving bowl and sprinkle with chopped cilantro.
  • If desired, shave thin strips of fresh coconut on top. Serve hot.

In its simplest form, it’s just a mashed avocado with a little salt.

The casseroles, meatless plates, and mashed potatoes have hogged the spotlight for way too long and it’s time we switched things up a bit.

Guacamole isn’t just that sad, brown chunky avocado bowl that’s been sitting on the counter for hours.

It deserves to be recognized as a full-fledged, dinner option. It’s fast, easy, and delicious; 3 things that make a perfect meal, right?

I depend on meals like guac. It gives me more time to do the things I love: hiking, writing code, and creating new vegan recipes for YouTube.

So with a new hope that guacamole will find its way to your dinner plate as a main course, I’d like to share with you my recent experience with GOODFOODS Tableside Chunky Guacamole.

A few nights ago after a long day at work…

Me: I picked up some guacamole from Sprouts.

Friend: It’s vegan right? Did you check the ingredients?

Me: Yes, it’s vegan. I checked the ingredients. It’s a new guacamole we haven’t tried yet.

Friend: O…k… (checks the ingredients to make sure it’s vegan)… it is.

Me: So you wanna try it? (I open the tightly sealed container and take a bite). YUM! Wow, this is really good. Tastes fresh too.

Friend: (overhears me, walks over and grabs my container and starts munching… chomp, crunch, gulp).

And that’s the day the guacamole died. True story.

I’m just glad I bought 2 containers!
