Back when I first went vegan in 2010, I started by drinking fresh fruit/vegetable juices. Here are my notes from those 4 days of juicing…

July 19:
Tried some new experiments today. Watched video where guy said to add fats to your juice to absorb all its nutrients.
Started the day with 1 lemon (with peel), 1 large (two thumbs worth) ginger shot.
The juices I made were:
- 3 leaves kale, 3 large carrots, 3 fuji apples, 1 tbsp. coconut oil
- 1/2 beet with greens, 4 green apples, 1/2 inch slice lime, 1 ginger piece (two thumbs)
- 1/2 bunch full celery stalks, 3 green apples, 1/2 lemon with peel, 3 kale leaves, 1 tbsp whole flax seeds
The coconut oil clumps up in the juice and makes it very unpleasant. The flaxseeds just sink to the bottom.

July 20 juice:

The back two (blue caps) each consist of: 1 cup fresh coconut water, 4 celery stalks, 2 kale leaves, 2 green apples, 1/2 lemon (including peel), 1 thumb size piece of ginger.
The front, purple juice, contains: 1 large beet, 3 fuji apples, 1 thumb size piece of ginger, and 1/2 inch slice of lime (with peel). The front right juice contains: 6 cups spinach, 2 kale leaves, 3 fuji apples, 1 thumb size piece of ginger, 1 cup broccoli, and 1/16 cup chopped parsley.
The back right juice is strictly carrot only.

July 21:
Started the day with a 1 fuji apple, 1/6 purple cabbage shot.
The above picture (left to right):
1/2 beet with greens, 4 green apples, 1/2 inch slice lime, 1 ginger piece (two thumbs)
1/2 small watermelon (including rind), 1/2 lime (with peel)
7 small carrots (each carrot gives about 1 ounce of juice), 5 naval oranges
5 cups spinach, 4 fuji apples, 1 thumb size piece of ginger, 1 cup broccoli, and 1/16 cup chopped parsley
Also, I had 1 cup fresh organic blueberries and 1 grapefruit.

July 22:

Started the day with a 1 fuji apple, 1/6 purple cabbage shot.
The above picture (left to right):
6 cups spinach, 8 carrots, 2 fuji apples
1/2 small watermelon (with rind), 1 lemon (with peel) – I tried this with lime instead of lemon yesterday and it was decent.
16 carrots, 2 fuji apples
I’m also eating 1 1/2 cups blueberries, the other 1/2 of the small watermelon (without the rind), and 1 mango.
